The regions of North and South America encompass a wide variety of styles and flavours of food, many of which are not widely known outside their homeland.
Of the ones that have travelled, the best known are probably chillis and burritos from Mexico, barbecued burgers, ribs and Cajun chicken from the Southern States of North America and the seafood chowders of the Atlantic and Pacific Seaboards. Spicy chillies and lively pepper are probably the most widely used spices in savoury food, whilst in sweet dishes cinnamon, vanilla and nutmeg are the defining flavours.
