Probably the flavour most associated with the Caribbean Islands is the vibrant and spicy Jerk sauce. Used to marinate any meat or fish before grilling or barbecuing, the fiery heat of scotch bonnet peppers is tempered slightly by the sweetness of sugar and the aromatics of allspice, cinnamon and nutmeg.
